My late wife used to make (basically) this same dish for me. It's naturally low carb also. This week is the anniversary of her passing. Thank you for the idea, Renee.

This looks yummy. I sometimes broil tomato halves, brushing the cut side with olive oil and sprinkling with salt, pepper, and garlic powder. I hadn’t thought to add Parmesan.

I was just thinking of you, and of your loss, the other day. I mean, out of the blue, and I don’t even recall the context. Probably musing on my health problems and food allergies, and wondering how serious they are and what my family would do without me in a worst-case situation, or possibly hollering for a child to come get a trip-and-fall hazard off the staircase, again, before I broke my neck and then where would they be? [I’m an expert at the future-disaster-scenario type of Mom lecture.] Then I saw this post.
