Cousin Jimmy’s Triple-Meat, Triple-Cheese Ultimate Low-Carb Lasagna

Lasagna
The meats are ground beef, sausage, and turkey; the cheeses are ricotta, mozzarella, and parmesan; and if you'll look close, you'll see that the noodles are sliced turkey breast, which is what makes this low carb!

Author: Jimmy Akin

Jimmy was born in Texas, grew up nominally Protestant, but at age 20 experienced a profound conversion to Christ. Planning on becoming a Protestant seminary professor, he started an intensive study of the Bible. But the more he immersed himself in Scripture the more he found to support the Catholic faith, and in 1992 he entered the Catholic Church. His conversion story, "A Triumph and a Tragedy," is published in Surprised by Truth. Besides being an author, Jimmy is the Senior Apologist at Catholic Answers, a contributing editor to Catholic Answers Magazine, and a weekly guest on "Catholic Answers Live."

  1. The Pachyderminator,
Actually, it is surprising how well turkey, ‘camouflaged’ as it were, can substitute for pasta.
Yet, I agree with you. ;-D

  2. Theresa: Until I come out with a low carb cookbook, just take your favorite lasagna recipe and substitute a slice or two of turkey breast for each noodle you’d use (as well as eliminating sugar, etc., from the recipe; use Stevia or Truvia or the like instead).
